NYC Nom Nom is a blog about food. Restaurants and recipes... from the good, to the bad, to the un-nommable. Recently, I joined Weight Watchers. But I refuse to give up my love for food. Join me on my journey of recipes and restaurants (whether you're dieting or not).

I am very fortunate in that I get to try many of the best restaurants in NYC. I also am realizing that I love to cook and have been expanding my culinary skills with my boyfriend, Mike. So what better way to chart my path through the world of food than with a blog?

I would not consider myself a foodie, as that moniker carries with it some level of expertise, of which I have none. I just really love food and am very lucky to have both access to good restaurants and a really great kitchen (by New York City standards anyway).

Teriyaki Chicken & Roasted Squash

Sometimes you just need to make do with what you’ve got.  One given night, I had boneless, skinless chicken breasts, teriyaki sauce, pineapple chunks, olive oil, rosemary, balsamic vinegar, and squash.  So… I made teriyaki chicken with roasted pineapple and some roasted squash.

A perfect easy, healthy meal.

Roasted Squash
Points = 4 (for half the squash)

Ingredients:

  • Squash- Peeled and Cubed (really any kind will do… we’ve done this with butternut, acorn, and delicata)
  • 1 Tbl. Olive Oil
  • 1 Tbl. Balsamic Vinegar
  • 1 Tbl. Rosemary
  • Salt & Pepper

Directions:

  • Pre-heat to 400 degrees.

  • Put squash into a bowl and drizzle with olive oil and toss with rosemary.  Add salt & pepper to taste.

  • Spray baking sheet with cooking spray (or use a Silpat) and place squash into pan in a single layer (overlapping means not crispy)

  • Roast squash for about 40 minutes until squash is slightly brown, crispy on the outside, and soft on the inside.

Broiled Pineapple

Want a delicious dessert that is incredibly easy to make and pretty healthy?  You MUST try broiled pineapple.

You slice up pinapple, put it on a pan (I used a bakers rack so air goes underneath, though this probably isn’t necessary) and sprinkle it with brown sugar.  Then you put it in the broiler until it gets a little bubbly and crispy.

Take it out, and enjoy some easy, healthy bliss.
